Floridia Cheese Pecorino Pepato
Floridia Pecorino Pepato is a natural cheese manufactured from fresh pasteurised cow’s milk. This cheese is a drum-shaped wheel and distributed throughout are whole black peppercorns, firm in texture with a hard body. Pepato is matured for a minimum of 4 months, where it develops its characteristic spicy taste. It is an exciting alternative to the more common Pecorino. The salty, tangy citrusy flavours complemented by the spiciness of the peppercorns make this cheese a great table cheese.

TAFE South Australia ACMAA Pepato
Pepato is a Romano style cheese made with cows milk. Without the Peppercorns it is known as Vaccino. With the added peppercorns the cheese is known as Pepato. It is a hard Italian cheese that has a variety of uses. The cheese itself is piquant but the enhancement of peppercorns lifts the flavour profile to another level. Being a hard cheese Pepato is very versatile, not only is it excellent on a cheese board but well suited to dishes. It can be grated or shaved in pasta, soup or over a salad. It can be eaten as a younger cheese making it not so piquant with a mild undertone of sweet aromatic notes. The texture is longer and more supple. Again a good choice for a cheese board.

Raised on a dairy farm in the Great Southern region, Dellendale Creamery’s cheesemaker Chris Vogel spent 10 years perfecting his technique in Switzerland before settling in Denmark, Western Australia. Back on Australian shores Chris established his own boutique Dellendale brand and continues to adapt his Alpine and raw milk style specialty, adding some local flavour with Australian milk and native herbs.

Woombye Ash Brie is our most recent cheese created and was included in our range 18 months ago. It starts life as our triple cream brie recipe which is a delicious creamy rich cheese. Then during maturation we carefully hand roll each cheese in ash which results in a striking black and white appearance on the mould as it matures. The ash adds a slightly smoky and mushroom flavour profile to the rich and creamy centre creating a unique cheese. Woombye Ash Brie is fast becoming one of our most popular cheeses in our range which we are very pleased with.

Since then the company has grown in size and staff and over the years has increased its capacity to produce cheese and different variations. Floridia Burrata is a natural cheese made from fresh pasteurized cow's milk. The important thing to remember about this cheese is that while it's made from mozzarella, burrata is not mozzarella cheese. Floridia Burrata is its own, very special type of cheese. Rich and buttery in flavour without being too indulgent, Floridia Burrata has an outer shell made from mozzarella that's formed into a pouch and then filled with soft, stringy curd and fresh cream. The finished Burrata is then tied to form a little topknot pouch and packed with brine in a container. The real magic happens when Floridia Burrata is sliced open and the creamy insides spill out. Floridia Burrata is best served fresh at room temperature, goes well with salad, crusty bread, prosciutto, fresh tomatoes with olive oil and cracked pepper or in pasta. Best eaten within 24 hours.

A moderate spread of blue mold, together with the creaminess of sheep curds, produces a mild blue flavor, velvet mouth feel and fragrant aroma. The distinctive finish is sustained and soft on the palate. Prom Country Cheese Venus Blue is a delectable table cheese with a brine-washed natural rind. 2kg wheels are cellar matured for 5-8 months to slowly develop flavor and texture. Made with fresh seasonal ewe’s milk from a single herd, indigenous cultures, vegetarian rennet, and hand-salted with natural sea salt. Hand-piercing gives a random penicillium roqueforti distribution through natural cavities within the curd. Cheesemaking cultures have been developed from the farm’s own raw milk, producing a unique regional culture ideally suited to this blue cheese made with milk from the same terroir.

Prom Country Cheese is a sheep dairy farm run by second generation cheesemakers Burke and Bronwyn Brandon in the lush hills of South Gippsland, Victoria. Pasture-fed ewes are milked seasonally in a converted herringbone cow dairy, and the fresh milk processed onsite into a variety of specialty mold ripened cheeses. The model Landcare farm is managed sustainably with no chemical sprays or fertilisers. Cows milk cheeses are also produced from a neighbor's dairy. The cheesery cellar door opens on weekends for cheese platters and farm produce lunches, where visitors can see where their food comes from and how it is made.

About the Producer | Gelateria Gondola
The Gelateria Gondola story began back in Italy where, as a young boy, Luca Zanini, dreamed of one day owning his own gelateria. His passion for food grew with him and he trained as a chef in IPSSAR Maffioli in Castelfranco Veneto, Italy. His qualifications took him around the globe where he gained experience in some of the world’s best restaurants in Stuttgart, Germany; London, UK and; Tenerife, Canary Islands. Luca spent a gap year as a gelatiere in Germany where he mastered his skills and further grew his dedication for gelato making. He eventually came to live in Sydney, Australia where his long held dream of creating authentic artisanal gelato was realised with the opening of Gelateria Gondola in Chatswood. Many awards later, Luca is happy to be sharing his childhood dream with the world.
