Apple Crumble Cups

This recipe was designed for school canteens, but is also suitable for home.
These snack cups are scrumptious and are a fabulous make and take breakfast on the run!
Ingredients
10 apples, peeled, cored and sliced½ cup water
¼ cup sugar
1kg reduced fat vanilla yoghurt
2 1/2 cups low fat muesli
Handy Tips
Granny Smith apples are the best for cooking!
The stewed apples can be made in advance and kept refrigerated for 5 days before assembly. Substitute stewed apples for canned fruit in natural juice if desired.
Apple Crumble Cups will only last a day or two in the fridge once assembled, as the muesli can become soggy.
Method
- Combine apples, water and sugar in a saucepan and cook, stirring occasionally, until apples are just tender, about 15 minutes. Cool and refrigerate until required.
- Layer apples, yoghurt and muesli into 10 x 225ml disposable serving cups, finishing with a layer of yoghurt and a sprinkling of muesli. Cover and refrigerate until required.
