These balls are a much healthier version of the very popular lamington or rum balls.
Ingredients
10 wheat cereal biscuits (eg. Weetbix or Vita Brits)2 tablespoons cocoa powder, sifted
1/4 cup desiccated coconut
100g diced dried apricots
1/4 cup sultanas
1/2 cup skim sweetened condensed milk
175g reduced fat cream cheese, softened
1/3 cup desiccated coconut, extra for coating

Method
- Using clean hands, crush cereal biscuits into fine crumbs in a large bowl. Stir in cocoa, coconut and dried fruit.
- Mix condensed milk and cream cheese together until smooth and stir into the dry ingredients until evenly combined.
- Roll the mixture into bite-size balls and then roll in remaining coconut to coat. Refrigerate until ready to serve.
