Peanut Butter Brownie Cookie Sandwiches

A classic combo of peanut butter and chocolate makes these sandwiched style cookies irresistible.

Ingredients

50g unsalted butter, chopped
250g dark chocolate, chopped
2 eggs, lightly whisked
225g white sugar
30g plain flour
1/2 teaspoon baking powder
30g cocoa powder

Peanut Butter Frosting

250g cream cheese, softened
15g caster sugar
150g good quality smooth peanut butter
40ml milk

Method

  1. Preheat oven to 180°C (160°C fan forced). Place butter and chocolate in a heatproof bowl over a saucepan of simmering water and stir until melted. Remove from heat. Quickly stir in egg, sugar, flour, baking powder, cocoa powder and a pinch of salt until just combined.
  2. Drop 2 teaspoons of mixture onto trays. Bake for 12-15 minutes or until just set. Cool on trays.
  3. Beat peanut butter frosting ingredients together in a bowl. Pipe onto biscuits and sandwich together.
