Strawberry and Watermelon Granita with Creme Fraiche

This refreshing granita is simple to make and topped with the crème fraiche is heavenly.
Ingredients
2/3 cup caster sugar350ml water
1/2 vanilla bean, split and seeds scraped
350g strawberries, hulled
300g watermelon, chopped
1 lemon
300g creme fraiche or double cream
Method
- Bring sugar, water and vanilla to the boil in a small saucepan and continue boiling for 5 minutes. Remove from heat and cool.
- Zest the lemon rind into thin curls or alternatively, peel the lemon and finely slice the rind and set aside. Juice the lemon.
- Puree strawberries, watermelon and lemon juice in a food processor or blender until smooth, then strain through a fine sieve. Discard the seeds. Stir in the syrup and then place in a freezer proof container and freeze for 2 hours until semi-set. Stir the mixture making sure to break up any icy clumps. Freeze until set.
- Rake the granita with a fork until snow like and spoon into serving glasses. Top with a scoop of creme fraiche and top with curls of lemon rind.
