Strawberry and Watermelon Granita with Creme Fraiche

This refreshing granita is simple to make and topped with the crème fraiche is heavenly.

Ingredients

2/3 cup caster sugar
350ml water
1/2 vanilla bean, split and seeds scraped
350g strawberries, hulled
300g watermelon, chopped
1 lemon
300g creme fraiche or double cream

Method

  1. Bring sugar, water and vanilla to the boil in a small saucepan and continue boiling for 5 minutes. Remove from heat and cool.
  2. Zest the lemon rind into thin curls or alternatively, peel the lemon and finely slice the rind and set aside. Juice the lemon.
  3. Puree strawberries, watermelon and lemon juice in a food processor or blender until smooth, then strain through a fine sieve. Discard the seeds. Stir in the syrup and then place in a freezer proof container and freeze for 2 hours until semi-set. Stir the mixture making sure to break up any icy clumps. Freeze until set.
  4. Rake the granita with a fork until snow like and spoon into serving glasses. Top with a scoop of creme fraiche and top with curls of lemon rind.
