Washed Rind with Rosemary and Port Infused Figs

Ingredients
1 cup port2 tablespoons sugar
1 cinnamon stick
3 fresh rosemary sprigs
150g dried figs
250g washed rind cheese
lavosh crackers, for serving
Handy Tips
Port Infused Figs can be kept refrigerated in a jar for up to a month.
Method
- Combine port, sugar, cinnamon stick and rosemary in a saucepan and bring to the simmer over medium heat, stirring until sugar has dissolved. Add figs and simmer for 40 minutes or until figs are soft and syrup is thick, cool to room temperature.
- Place cheese on a serving platter and drizzle with a little of the port syrup, serve with figs and lavosh.
