On a hot summer's day, watermelon is so thirst quenching and to incorporate into the salad makes a lovely dinner with a BBQ chicken or grilled fish.
Ingredients
1.5kg seedless watermelon, rind removed, sliced100g snow peas, trimmed and finely sliced
150g marinated soft feta cheese, oil reserved
1 tablespoon fresh mint leaves
Finely shredded zest of 1 lemon
2 tablespoons lemon juice
1/2 teaspoon caster sugar, or to taste
Salt and freshly ground black pepper, to taste
