Apple Cobbler

A good old fashioned cobbler makes a wonderfully economical dessert that Is perfect to serve with ice-cream.

Ingredients

4 Granny Smith apples, peeled, cored and chopped
1 tablespoon water
3/4 cup self raising flour
2 tablespoons caster sugar
60g reduced fat dairy spread, melted
2 tablespoons whole milk
1 egg
12 small scoops reduced fat vanilla ice cream
1/2 cup fresh berries, for serving

Method

  1. Place the apple and water in a microwave proof dish, cover and microwave on HIGH for 3 minutes or until cooked and tender. Spoon into an ovenproof dish.
  2. Beat the flour, sugar, dairy spread, milk and egg together with a wooden spoon until smooth and combined. Spoon over apples and bake at 180°C oven for 25-35 minutes or until cooked and golden. Stand for 5 minutes before serving with ice cream and berries.
