Banana bread is an excellent way to use up old bananas and makes a tasty lunchbox snack.
Ingredients
2 cups wholemeal self raising flour1/2 teaspoon bicarbonate of soda
1 teaspoon cinnamon
1/4 cup sultanas
1/2 cup reduced fat vanilla yoghurt
1/2 cup reduced fat milk
1/2 cup caster sugar
1 egg
1 cup canned pie apple, chopped
1/2 cup reduced fat spreadable cream cheese, for serving
1 teaspoon cinnamon, extra, for sprinkling
1 fresh granny smith apple, for decoration (optional)
Handy Tips
These muffins are best served within one day of making, but can be frozen for up to 1 month before being iced.
Always use a large metal spoon and a 'cutting' action when folding ingredients in a muffin mixture.

Method
- Sift together flour, bicarbonate of soda and cinnamon and return the husks to the bowl. Stir in sultanas.
- Whisk together yoghurt, milk, sugar and egg. Stir in apple and then gently fold into sifted dry ingredients until just combined, taking care not to overmix.
- Spoon mixture into 12 x 1/3 cup capacity lightly greased muffin pans. Bake at 200°C for 12-15 minutes or until golden and cooked. Stand in pan for 5 minutes before turning onto a cooling rack to cool completely.
- Spread each muffin with 2 teaspoons cream cheese, dust with cinnamon and top with a wedge of apple for decoration, if desired.
