Ingredients

1 tablespoon reduced fat dairy spread
1 tablespoon plain flour
1 cup skim milk
1/4 cup grated 50% reduced fat cheddar cheese
500g cauliflower, steamed until tender
1/4 cup parmesan cheese, finely grated, for serving

Method

  1. Melt dairy spread in a saucepan. Add flour and cook stirring continuously for 1 minute.2. Gradually add milk, and thicken over low heat, whisking continuously. Stir in cheddar cheese until melted and pour over cauliflower.3. Sprinkle with parmesan and serve.
